Why half-and-half behaves differently

Froth for less time

Introduce air near the surface for only a few seconds, then move the whisk deeper to smooth the bubbles. The entire process may take 10–15 seconds—shorter than a low-fat milk recipe.

Fix foam that became too stiff

If the mixture forms clumps or stiff peaks, it was frothed too long or contained too much half-and-half. For the next batch, shorten the time and return to the three-to-one ratio.

Do not try to repair stiff foam by aggressively stirring it into the drink. A small spoonful can still be used as a topping, but it will not have classic pourable cold-foam texture.
